What you need

  • 1/2 cup of cold coffee

  • 3 tablespoons of a good quality gelatin

  • 1/2 cup of filtered water

  • 1/3 cup of maple syrup

  • 1/3 cup of cacao powder

  • 1 teaspoon of vanilla extract

  • Pinch of sea salt

  • Saucepan

  • High speed mixer

  • 8x8 baking dish

To Prepare

  1. In your mixing bowl add the cold coffee and sprinkle the gelatin on top. Set aside to bloom.

  2. In a saucepan, add the water and maple syrup. Bring to a boil while stirring. Lower to medium-low heat and continue to stir while it simmers for 5-10 minutes.

  3. Remove the water maple mixture from the heat and whisk in the cacao powder until smooth.

  4. With your mixer on low speed, carefully pour the hot liquid into the gelatin, then slowly increase the speed to high. Add in the vanilla and salt at this time.

  5. Mix on high for about 8-9 minutes. Around the 7 minute mark you will see the mixture become fluffy and pale. These set up fast and I find that marshmallows need to be poured well before most recipes indicate. Do not wait for soft peaks to form! When you lift the mixer, the mixture will pour steadily off of the beater. This is when you want to stop.

  6. Pour the mixture quickly into your baking dish and set aside to cool and set up for 6-8 hours. Cut and store in an airtight container. Enjoy within 1-2 days or flash freeze for future use.
